The formatting process in children's books is never an easy task. First of all, you have to make sure you have the correct book size and margins you need for your type of book.
Children's books come in all different sizes depending on what type and age group you are writing for. For instance, there could be a couple page board book, 20- 40 page picture book, 50- 100 page early chapter book, etc.
After picking the right size for your book, you have to make your illustrations fit within the margins. If they go beyond those margins, some of the important detail in the illustration will be lost. Also, pay attention to the gutter, or gully. That is the middle of the book where the pages connect. So far, I have not worked with full spread illustrations so I can't give you any tips on that part.
